MY FAVORITE MUFFIN RECIPES








Today's post is a little different than what I normally write about. Fun fact about me: I love to bake! I love muffins because you can bake them beforehand and just grab them and go on busy mornings. My kids love them. Here are four of my favorite holy grail muffin recipes!

By the way, i don't use a million bowls when I bake. Throwing everything in my kitchen-aid is more my jam 😉

Healthy Blender Muffins: (not pictured)

1 cup of plain greek yogurt
2 eggs (or 4 egg whites)
2 cups of oats
2-3 ripe bananas
1/2 tsp vanilla
1 1/2 tsp baking powder
1-2 tbsp of honey, or sugar substitute
handful of chocolate chips (optional)

Preheat oven to 400 degrees. Pour the oats into a blender and mix until it looks like sand. Add in remaining ingredients and mix. Pour into baking cups. Bake for about 18-20 minutes.


They don't taste "healthy" at all, and I don't feel guilty when I down two of them. I don't tell my kids what I put in them and they don't ask - they devour them. I top mine with peanut butter and a slice of banana or a little bit of nutella for a "frosting". 


Blueberry Muffins: with Streusel topping
2 large eggs
1 cup of sugar
1/2 cup (1 stick) melted butter
1 tbsp vanilla extract
2 cups all purpose flour
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup canola oil
2 1/2 cups of fresh blueberries*
(you can use frozen too - just make sure they're thawed)
1 cup of buttermilk
2 1/2 cups of flour

Streusel topping:
1/4 cup of sugar
1 tbsp of flour
1/8 tsp of cinnamon
2 tsp butter (melted)


Preheat oven to 425 degrees. Butter and grease muffin tins (or you can use baking cups) and start mixing the first four ingredients, then slowly add in the remaining. Pour batter into muffin tins (i use baking cups) and spoon streusel topping on each muffin. Bake for 5 minutes and then reduce the temperature to 375 degrees. Keep the muffins in the oven! This gives the muffin top that bakery "look". Continue baking for about 22 minutes. Let them cool for about 10-15 mins. ENJOY!



Chocolate Chip Muffins: Bakery Style

1 cup of sugar
2 eggs
1 cup of buttermilk
1 tbsp vanilla extract
1/2 cup butter; melted (1 stick)
1/2 tsp salt
1 tsp baking soda
1 tbsp baking powder
2 1/2 cups of flour
1 1/2-2 cups of chocolate chips

Preheat oven to 425 degrees. Butter & spray muffin tins (or use baking cups). Start by mixing the first five ingredients. Slowly mix in the remaining ingredients. Bake at 425 for 5 minutes, and then reduce the temperature to 375 (keep muffins in!) and continue baking for 22 minutes, or until toothpick comes out clean.

Cinnamon Banana Muffins:
WARNING people will beg you for this recipe! Trust me 😀

2 eggs
2/3 cup of sugar
1/2 cup of vegetable oil
3-5 ripe, mashed bananas
1 tsp vanilla
1 2/3 cup of flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon

Cinnamon-Sugar topping:

1/4 cup of sugar
1/2 tsp cinnamon
1/4 cup of butter; melted


Heat oven to 375 degrees. Same as above - butter and grease muffin tins or use baking cups. Start mixing the first five ingredients, then incorporate the rest. Bake for 18-20 mins and let them cool on a wire rack. After they are cooled down (about 15 mins or so) in a small bowl, mix the 1/2 cup of sugar and 1/2 tsp of cinnamon. In another bowl, melt the 1/4 cup of butter. Take one muffin at a time and dip the top into the butter, and then into the cinnamon-sugar mix until you've done all of the muffins. ENJOY!
